Ais Kacang (ABC)

紅豆冰Ais Kacang

Malaysia's iconic shaved ice dessert piled high with colourful toppings

What is Ais Kacang (ABC)?

Ais kacang - also called ABC (Air Batu Campur, meaning "mixed ice") - is Malaysia's most spectacular shaved ice dessert. A mountain of finely shaved ice is drizzled with rose syrup, sarsi syrup, and condensed milk, then loaded with toppings: red beans (kacang merah), sweet corn, grass jelly (cincau), palm seeds (attap chee), cendol jelly, and sometimes ice cream. The result is a towering, rainbow-coloured creation that is as photogenic as it is refreshing. In Penang's tropical heat, ais kacang is not just a dessert - it is survival. Every hawker centre has at least one stall, and the best ones pile the ice so high it threatens to topple before you can dig in.

History & Origins

Ais kacang traces back to the early days of ice availability in Malaya. Before refrigeration, blocks of ice were imported and shaved by hand for simple iced desserts. The original version was just shaved ice with red beans (kacang = beans) and syrup - hence the name. Over the decades, Penang hawkers kept adding toppings in a delicious arms race: grass jelly, sweet corn, palm seeds, cendol noodles, and eventually ice cream and condensed milk. Each generation of hawkers added their signature touches. Today's ais kacang is a maximalist masterpiece compared to its humble origins, but the soul remains the same - sweet, cold relief from the equatorial heat. Penang's versions tend to be more generous with toppings than those in KL or Johor.

Variations to Try

With ice cream

A scoop of vanilla, yam, or coconut ice cream on top of the shaved ice mountain. Adds RM 1-2 but makes it extra indulgent. Very popular.

Extra toppings

Some stalls offer add-ons like durian, longan, lychee, or jackfruit. Penang stalls tend to be generous even with the basic version.

Cendol-ABC hybrid

A combination of ais kacang and cendol in one bowl - all the ABC toppings plus extra gula melaka and coconut milk. The best of both worlds.

Fruit version

Modern cafes offer fruit-forward versions with fresh mango, strawberry, or passion fruit. Pretty but not traditional Penang style.
