Charcoal Char Koay Teow — better known as Siam Road Charcoal Char Koay Teow — is one of Penang's oldest and most revered CKT stalls, and a Michelin Bib Gourmand pick. The stall does essentially one thing: flat rice noodles stir-fried over a charcoal fire, which lends the dish its signature smoky 'wok hei' aroma. Each plate is fried to order with prawns, cockles, egg and chives, and can be spiced to taste. Expect a long queue — waits of an hour or more are normal — and bring cash; there's no booking, you simply line up.
